New Year cake

Materials
1.5 cup extra virgin olive oil,
2 cups sugar,
5 eggs,
3 vanillas,
Zest and juice of 2 oranges,
½ cup milk,
500g self-rising  flour alone.

Performance
Beat the oil and sugar. After the egg yolks, vanilla zest, orange juice, milk, flour and then add the beaten egg whites meringue and mix gently. Butter a baking dish and transfer the mixture. Bake in a moderate oven for about 1 hour.

Cheese bread

Materials
3 tablespoons extra virgin olive oil,
1 cup water,
250 grams feta
1 sachet yeast powder
Flour as getting.

Performance
Dissolve the yeast in lukewarm water, pour the oil flour and knead. Add the feta cheese into small pieces and knead. Spread the dough in a greased baking pan pressing with our fingers. Allow some time to rise. Bake in moderate oven about half an hour.

Olive bread

1 kg of flour,
50 grams of yeast,
1 cup extra virgin olive oil,
1 small onion, grated
1 cup black olives without the stone,
1 teaspoon crushed dried mint,
Little salt.

Performance
Dissolve the yeast in lukewarm water. Add salt, onion, olive oil, mint, flour and warm water as needed and knead well. When the dough is soft add the olives and knead. Shape two loaves round or oblong and sprinkle with sesame seeds. Put in greased baking tray and leave to rise. Bake in a moderate oven.

Fish stew

1.5kg large fish,
3 onions or pound Kokkari,
1 cup extra virgin olive oil,
1 clove garlic,
2 ripe tomatoes,
1 stick cinnamon,
2-3 bay leaves,
salt,
pepper.

Performance
Salt the fish and cut into slices. In a saucepan put the oil, onions, garlic, tomato, cinnamon, bay leaf, salt, pepper and cook for 10 minutes. Add the fish, 2 cups of hot water and boil for 20 minutes.

Yoghurt pie with olive oil

1 cup extra virgin olive oil,
2 cups sugar
4 eggs,
1 yogurt,
3 teaspoons baiikin powder,
zest of 1 lemon,
3 cups flour.

Performance
Beat the oil and sugar, then egg yolks, zest, yogurt, flour with baiikin and finally the egg whites meringue. Pour into greased pan and bake in a moderate oven.

Flavoured oils

Olive oil with basil
Place in a glass 2 cups extra virgin olive oil, basil 3-4 branches we have washed and dried well as two to three cloves of garlic whole. Our oil will be ready in 10 days peripou.Idaniko mainly raw vegetables and tomato.

Olive oil with garlic and rosemary
In a bottle put 2 cups extra virgin olive oil, 2 cloves of garlic, 1 sprig rosemary and 5 grains black or white piper. Ideal for baked potatoes, eggplant, lamb and especially in fish.

Olive oil with garlic

Olive oil with spices
In 2 cups extra virgin olive oil put five peppercorns, 4 allspice berries, 1 teaspoon of cumin and 1 stick cinnamon.

We can keep in olive oil all kinds foods. Vegetables, eggplant or peppers pickled beets in vinegar and oil, sun dried tomatoes, bulbs, tomato paste, octopus in vinegar, anchovies or sardines.

We can make different combinations. But always careful to keep the mixture from light and heat.
